Bean Sprout Namul Recipe

Ingredients
Ingredient | Amount |

Bean sprouts | 1 pack (about 200g) |
● Chicken stock granules | 1 tsp (plus more as needed) |
● Sesame seeds (crush by hand or grind) | About 1 tsp |
● Sesame oil | About 1.5 tsp |
● Salt | To taste |
Pepper | Optional |
Instructions
- Boil 1 liter of water with a pinch of salt (about 1/2 tsp).
- Rinse the bean sprouts with water.
- Once the water is boiling, add the bean sprouts and boil for 1–2 minutes. Drain well.
- While hot, transfer to a bowl and mix with all seasonings (marked ●).
- Taste and adjust with extra salt or pepper if needed.

Prepare the Boiling Water
Bring a large pot of water to a boil.
As a guideline, use 1 liter of water and 1/2 teaspoon of salt (not included in ingredients) for one pack of bean sprouts (about 200g).

Wash the Bean Sprouts
If you are bothered by the thin root hairs called “higene” on the bean sprouts, you can pinch and remove them by hand.
(They look nicer if you remove them, but I usually leave them on. Haha.)

Boil the Bean Sprouts
Put the bean sprouts into the boiling water and boil for about 1 to 2 minutes.
After 1 minute, taste one to check the texture.
When it reaches your preferred firmness, drain in a colander and remove excess water well.

Mix with Seasonings
While the bean sprouts are still hot, transfer them to a heatproof bowl and mix in the following ingredients▼
- Chicken stock powder (chicken soup base)… 1 teaspoon
- Sesame oil… 1.5 teaspoons
- White sesame seeds… 1 teaspoon (lightly crush with your hands)
- Salt… a pinch
For Beginners
Chicken stock powder is a Chinese-style broth concentrated with rich chicken flavor.
Besides chicken stock powder, there are various types of Chinese soup bases like “chuka dashi no moto,” “Dashida,” and “Weipa.”
Each one has slightly different levels of saltiness and flavor strength, so it’s best to start with a little less than you think.
You can always add more seasoning later, but if it becomes too salty, you can’t fix it.
Be sure to taste at the end and adjust the flavor to your liking♪
