For the “Sweet and Spicy Sauce,” use sugar:soy sauce:mirin:sake in a 1:1:1:1 ratio. If you add vinegar at half that amount (0.5 ratio), it becomes “Nanban Vinegar Sauce”♪
How to make
Prepare the light-style fried chicken in advance.
Put all the ● seasonings into a frying pan and heat them, making sure the sugar dissolves completely.
When the bubbles become larger and the sauce thickens, remove it from the heat and check the consistency.
Add the fried chicken!
Once the sauce coats the chicken evenly, it’s ready♪
If you want to make Nanban vinegar sauce, just add 1/2 tablespoon of vinegar together with the ● seasonings!
Sweet and Spicy Sauce Ratio Use sugar:soy sauce:mirin:sake = 1:1:1:1. If you add vinegar at half that amount (0.5 ratio), it becomes “Nanban Vinegar Sauce.” (Example: For 1 tablespoon each of sugar, soy sauce, mirin, and sake, add 1/2 tablespoon of vinegar.)
Put all the ● seasonings [sugar, soy sauce, mirin, sake] into the pan.

Heat and dissolve the sugar.
Cook over low to medium heat, stirring slowly until the sugar completely dissolves. (You can use a wooden spatula to stir.)
You can adjust how much you reduce the sauce to your liking, but simmering it a little helps keep the fried chicken coating crispy and crunchy. Be careful not to reduce it too much.
When the sauce starts to thicken, lower the heat or remove the pan from the stove briefly to avoid burning. It’s ready when the sauce reaches about this consistency. (Since it’s hard to see in photos, we’ve included a video below.)

Add the fried chicken and coat with sauce.
If there’s more sauce than fried chicken, set some aside in a separate container.
Add the prepared fried chicken to the pan and toss to coat evenly with the sauce.
(If the sauce is already well reduced, it’s better to turn off the heat and gently mix the chicken in.)

Once the sauce is evenly coated on the fried chicken, it’s ready. Serve while hot♪
Tips
If you want to increase the amount of sauce, you can make all the ● seasonings 2 tablespoons each (for a glossy, rich finish♡).
Be careful not to reduce the sauce too much! It’s best to toss the fried chicken when the sauce has just thickened slightly.
Simply adding vinegar lets you turn it into a Nanban-style vinegar sauce! Feel free to adjust to your taste♪
